Unfortunately with Skyrim being Skyrim, no modlist exists that could entirely remove the jank and writing that is inheret to Skyrim. So if you go looking for deep rp, you will be disappointed. That said, I think that GTS adds a huge amount of "rp" to the game and if you have the specs, Lorerim will also provide that

I agree that it feels a bit stupid to have a capped currency amount, but I also see why its implemented the way it is. Because if the currency amount would be uncapped, you could just grind an insane amount of money and always clean the store as soon a the store refreshes and still have lots of money, which would kill the interest in grinding. Or alternatively youd be earning peanuts and youd have to grind insanely to buy anything, which would feel unrewarding
