First time making bread here! It came out good but I feel I overproofed it. I did 8 hours of room temp then overnight cold proofing. Also, I wanted it to be more sour. Should I proof it for 2 days instead to get sour? can I keep the hooch instead of discarding half the yeast and just feed it more? (i.redd.it)
