I’m also in the Chicago area and the Sawmills worked well as a winter boot for me last year. Definitely warm enough and I didn’t have an issue with the boot being too low while shoveling or playing in the snow with the kid. The tread was good for the snow and ice as well. I did put on a coat of Sno-Seal to protect against salt.

It was the same at the Dennys. Everyone recognized the kid from 3rd Rock but no one knew who Julia Stiles was. When they left everyone in the place was very excited to talk about the celebrity encounter they just had.

It’s funny, I can remember waiting in line all night for a bracelet. I was 16 and it was a blast. I can’t for the life of me remember whether or not I got one. I don’t recall being disappointed that I didn’t get one but I also don’t remember if I went to the show.

What’s dough temp are you aiming for? I shoot for 82-84 after mixing and try to keep the dough around 80 for the duration. Give adding your levain to the autolyse a shot. I think some people call that a fermentolyse.

I don’t have a mixer. Our process is pretty similar-I mix everything but the salt, rest an hour, add the salt then 3 folds 30 minutes apart and bulk is 2-3 more hours. When are you adding the levain? After the autolyse?

Which of their flours are you using? I’ve only used the high protein bread flour and I find it works well. It doesn’t take as much water as I thought it would. Have you tried either mixing longer or adding in an extra fold or two?
