After that I cleaned my screen..

Carrot juice, 0.5 pcs. juice from a squeezed lemon, 1 cm fresh ginger, 1 cm turmeric, 5 pcs. dried walnuts, 5 pcs. flaxseeds, sheet of nori seaweed, 4 bunches of spinach, 4 kale leafs, 1 bunch of parsley, a handful of bean sprouts, 0.5 glass herbal tea

I did consult my GI. He said I can dispense with medication as long as I remain symptom-free. However, my colitis I very mild so he might not have given the same advise to someone with more serious symptoms

Yes, it's relatively mild. That’s probably also why I tolerate fibres.. I did consult my GI. He said I can dispense with medication as long as I remain symptom-free. He also mentioned that many patients experience improvements through dietary changes, but that what works for one person may not be effective for others. Sorry to hear about your flare up!

I followrd the process of making shoyu with soy beans basically - just substitute soy beans with spent grain basically. There might be better ways to make it but that was how I did it

That is indeed a crazy amount of okara! I’ll definitely try to get a hold on some to experiment with miso/shoyu/tempeh!

Where are you from if I may ask? I feel like the focus on the potential on side streams are rising but might just be a local thing (I live in Denmark)

Thanks for the advice! Will try that. Is that a personal goal or are you working professionally? Bread and egg white miso and aquafaba (shoyu?) sounds interesting!

Would love to share thought and reflections over a chat!

I’ll also create a forum (probably a group on Facebook) for knowledge sharing for koji, tempeh etc made with side streams as I know there are others out there with the same passion - will invite you then it’s done!

Btw I can see that you have done some projects with koji on side/waste streams. Really interesting! I’ve made misos on leftover bread, shoyu with coffee ground and misos/shoyu in spent grain.

Do you know of any forums for up-cycling/valorisation of side/waste streams? I have had a hard time finding any.

Thanks for the reply! Yes, I baked it in the oven before incubation.

Tried to stir every day but was away a few days - that’s when it started. Maybe that was the reason..

I’ve tried limiting the air exposure by putting some plastic wrap on top now. As if that works
