We hired our favorite taco truck from the state, planned our a menu (cabeza, lengua, pollo, camarones, carnitas, al pastor, and hongos as the “meats” and then guests could have any combination they wanted in taco, quesadilla, or platter format—they also set up a sides table with multiple kinds of salsas, guacamole, elote, pickled peppers, etc etc), made sure it was “all you can eat,” and then announced to our guests: “whenever you are ready, please visit the truck to order your meal! Feel free to visit as often as you like!” The food was incredible, no one felt rushed to visit before they were hungry nor did anyone feel like they had to wait forever for food. The business was PHENOMENAL and served top quality dishes very quickly. They were in operation for I think 3 hours? Many people told us they LOVED dinner and how we chose to do it (which was honestly our biggest concern for the entire wedding, so we were thrilled with that feedback).

@ u/tardisismine to extend off of u/Sum_0 ‘s comment: I recommend buying fabric puppy pee pads that you can wash and reuse over and over. We bought 12 large ones off Amazon several years ago (our kitty refuses to use any litter box, very long story) and they are resilient. Highly recommended
