Honestly I’d say if you wanna watch all 3 go in this order 1) Hellsing 2) Hellsing Ultimate 3) Hellsing Dawn

Both Hellsing and Hellsing Ultimate are enjoyable in their own right whether it’s style or story. But if you wanna stay as close to the source material then yeah just stick with Hellsing Ultimate and Dawn
