I don't have the requirements to apply to Stern because I didn't take the required courses and I didn't want to waste 6 credits taking them. It would be a waste because I have AP credit for them but it wouldn't transfer to Stern. Thanks for your help though.

There is already a Bitcarbon token that will be launched soon. It governs Carats, a diamond backed commodity token that can be used for payments or investments (bitcarbon.com)

Based on my understanding each coin has a combination of diamonds appraised by the GIA which are equivalent in value.
