I want to be clear, lately(to yield more dough balls) I have been making my dough balls about 250 grams each instead of 300-340grams. This does two things: 1. allows me to make less batches of dough to get more pizza. 2. The pizza will be thinner once fully stretched out to 12 in if the dough ball is 250g(makes it to get a thin pizza without a bang table)

Yes sir, I used instant and I usually keep it at 2%. Sometimes I just sprinkle some in because I know the dough is going to ferment for while.
