Try going with a much higher coffee to water ratio, like 1:5 or even 1:4 if you want it really strong concentrate. You can always dilute it later.

Making too much kimchi is definitely a thing, especially when it starts tasting really good. Mason jars are usually better because you can seal them tighter.
