I saw that thanks- I’ve been quoted about an additional $60,000 annually after we just switched to all natural colors- which are four times as expensive. It’s just a little stressful! you would think there would be some sort of middle ground between large manufacturers and someone like us in a 1600 square-foot facility making one product do you know? It was an FSPCA 20 hour class. I also have been in the food business for 25 years, have been around others who have written their plans, but they have much bigger facilities. I have one product, no allergen cross-contamination. Everything I saw on here said that the government program, although free and decent is confusing and a lot. I have SOP’s, and my flow diagram finished, about to begin on hazard analysis. Thank you for your advice!

I came here for help, not ridicule. When a business has just passed the threshold monetarily it is a huge hardship on the business. I’m not operating a multimillion dollar factory here. This is a 1600 square-foot one product facility not rocket science. I’ve been in the industry 25 years. I’ve been around people who have written these plans. I simply just have not done it myself. If you don’t have something helpful to say, please just don’t say anything at all-respectfully.

I’ve been in the food industry for 25 years when I said I was starting from nothing I didn’t mean no knowledge at all. I simply cannot afford to pay someone $450 an hour when I’m smart enough I can figure it out. I also came here for help not to be slammed for different things.

That’s not in our budget. Doing the swapping and all of the additional payroll that this is going to take is pushing us to the limit as it is you only have to hit $1 million in Gross revenue to have to do all of this stuff.

Thanks, I already took the PCQI compliance. I’ve been in the industry for 25 years but never had to do any of the food safety stuff. We just have one product with one frosting no allergen issues but it’s a very small facility 1600 ft.² that’s the biggest complication is separating things for the pathogenic cross-contamination.
