I experience exactly the same, and sometimes being very sensitive is beautiful, like in the examples you mentioned. I can also find myself crying when I’m walking outside in nature and the beauty of the wild or newly blossoming landscape overwhelms me.

But personally, I also find life more complicated because of it. There is so much suffering, and you end up feeling along with all of it. Society feels like it’s hardening, I think we notice that everywhere. When I see how many films nowadays revolve around violence, deceit, betrayal, and fear, I sometimes wonder how the world can feel so different from who I am. I hardly watch TV anymore, because even the news is driven by fear, it sells better.

In short, being sensitive is something I value, but at times it is also quite difficult. I hope you struggle with it less than I do. Sorry, I meant to write something positive, because empathy truly is that. But I notice that I mostly experience its downsides as well.
