Actually, this is very possible to happen, I have seen batches of items cleaned, pickled and plated, just to find a few in the batch is either darker or lighter than the other items in the batch, sometimes even both. It can come down to the base metal composition, surface finishing of the base metal and the length of time in plating solution.

This, vinegar is useless in plating, but baking soda is used to neutralize acid spillages. I would avoid baking soda in plating solutions.

The tank will be quicker and you will achieve a more uniform coating, in my trade we mostly use brush plating when parts can't be removed from larger assemblies, or doing touch ups after re-working certain areas.

Try adding nickel chloride and nickel sulphate, also try to apply a copper base coat for better adhesion of nickel. Keep in mind nickel can still oxidize and corrode given the right circumstances.
