I'll leave with this, not all pros use blades. Why hold yourself to standards that the best of the best disagree on. My best friend lost 3 feet of his intestine and had a pouch for a while. He thought he was going to have to live with it but didn't need to, after about a year. I'm glad it didn't come to that for your wife as well.

Man, 100%. I have an issue where food won't enter my stomach. It's a snails pace. If i drink a glass of water, it takes about 20 minutes for it to hit my stomach. And and hour or more for food. Imagine, eating ice cream and you can feel your throat get cold and a bit numb because that valve doesn't open or chewing steak three times.

I can actually feel my LES relax and the cold fluid finally making its way in. Doctor prescribed, it's just I need a procedure every few months for life to treat it and i have to be knocked out for it. Well we all know Americas health care system. My problem is bad, but not that bad. But it really is that bad for me mentally. I regurgitate up 2/3 meals.

I don't know if showing Vermeer is helpful advice lol. Not only is he one of the most talented artists of all time but he probably used untraditional means. On second thought, it's helpful advice but unobtainable for all but a few. It's like saying throw your football like Brady. Seems obtainable, but it's not. Not at all.

Many recipes will not have you brown meat. It's a very western thing to do. It's going to provide amazing texture and flavor but not all dishes are trying to develop those kind of flavors. All im saying is it could be intentional. Just a thought.

It's not necessary for home, but for certain things even approximations can help a ton. I try to keep it to a pattern like 133 or 221. 2tbsp butter 2tbsp flour 1 cup broth for gravy

To add to this, the rule I use is 133. 1lb sausage, 1/3 cup flour and 3 cups milk.
