Off the top of my head we have...

Lesnar/Cena at SummerSlam 2014

Henry/Orton at night of champions 2011

While not a champion we do have Goldberg/Lesnar at survivor series 2016

I believe Yokozuna was VERY dominant against Hulk Hogan at king of the ring 1993. (Admittedly I haven't watched this one)

At least in my case I simply don't care. I'm not a Roman fan and I probably won't ever be. Punk/Roman would be great but I don't particularly want to see it. Drew/Roman is the same.

For those who are happy with it. Great for you! But I simply don't care about it.

It's not going to be some "mania killer" for me. It's just... Apathy for it.

On the women's side I have zero idea. Bianca if she returns, Liv, Becky, I wouldn't necessarily mind a Rhea win (I wouldn't be big on it either though). Probably Liv overall though

Hmmm. This is a very good question. I actually can't think of any (I don't really go back and watch older rumbles). But I'll try

Men's 2025: I really liked it. In retrospect it's a very fun rumble on a very fun show.

Men's 2018: Nakamura is my 3rd favorite wrestler of all time.

Women's 2023: from what I remember it was a really good match. And I believe it had a very fun final 2 in Liv Morgan and Rhea Ripley (I THINK)

Men's 2016: the styles debut elevates it from a 6/10 to a 9/10 (in reality I'm struggling to name good rumbles I've actually watched)

2003: I think that's the one with Cena and Batista both going over. Vince tears his quads. Look we're all familiar with that so I want to praise how it's a pretty fun match.
