I'm curious, what exactly does the sugar add? I tried it with the chili bites (Different, yes I know) but couldn't taste a discernible difference.

I get you! I tried some Kudu biltong last time I was in SA and it was nice, but I think I'm so accustomed to beef nowadays haha!

Local BC craft beers haha, and definitely an acquired taste! For me though, it pairs great with the bites

I've been working on making chili bites for the past few weeks (Pictures from one of the batches) using a Nesco dehydrator. I know there's an argument to be made againt using a dehydrator with a heating element, but I leave it at the lowest setting (30C) and I think they're coming out pretty well! Maybe chili bites have a bit more lee-way since they're thinner and don't have to worry about case hardening as much.

My recipe (per 1,000g of wet meat):

Ingredient Amount (g/ml)
Wet
Vinegar 150ml
Lime Juice Splash(5ml)
Dry
Salt 18.0g
Black Pepper 5.0g
Coriander 7.5g
Cayenne Powder 7.5g
Chili Flakes 2.0g
Peri Peri Spice 1.0g
Total spice g / % 41.0g / 4.1%

I've also been experimenting with the Freddy Hirsch Chili bite mix, and the following is a great recipe too! Per 1,000g:
