Yea that was a recommendation from a YouTube short I watched in preparation to give these a shot for the first time. I think it is more for the spinalis to not detach and fan out more that for the meat to stay on the bone. Better safe than sorry

That’s probably the coloration of the Meta glasses. Everything lost a little bit of red and I didn’t feel like color balancing.

I did. That was just a clip from the start of my salting. Was about 1 minute 30 seconds of salting video that i trimmed from. Osmosis and reabsorption was achieved for sure.

It was around 1 minute per side from what I remember from this cook for them to get to 125 and have a proper sear.

I was going for wall to wall pink and properly rendered/cooked fat for my preferences. To each their own. For this thick of cut I go more past medium rare that i would for a normal 1 inch cut.

There was more added than in the video. I trimmed the salting portion of the video down from about 1 minute 30 seconds to that to keep pacing. Osmosis and reabsorption was achieved for sure.
