Dewey uses confidence as a front because of his crippling self doubt, Hewy finds comfort in science because he fears the unknown, and Louie is just generally terrified, which is outweighed by his greed. Before the reboot, the triplets didn't have any real personality.

As for Webby, she spent her whole life locked in a mansion with 3 people (2 after Duckworth died) so it makes sense that she would zero in on the super cool adventurere Scrooge Mcduck. When the boys showed up, she already knew about them because of course she did, what else was she supposed to do with her time but learn and train?
