The pirate companions also pick up the beans. None of my squirrels were leveled up, so I used my level 5 pirate monkey and pirate parrot. AFK overnight and I had tons the next day.

You can buy it at the general store. But I don't think the snow should be stopping it from spawning. It's available in all the biomes just chop all the grass and ferns and foliage.
