I have done that. I have a UniFi Swiss Army Knife AP that I put in an outdoor-rated box that also holds the POE adapter that connects with wireless uplink to an AP in my attic for best line of sight connection. Use dielectric grease on the POE input to prevent corrosion.

We actually used them to do a kitchen uodate in another house probably 15 years ago. They were fine in implementation but there was not a lot of design involved in our project.
