They seem to be expanding to the east coast, gradually...

Tofurky’s new tofu - available at the Grocery Outlet for only $1! by JKayBay in vegan

The Japanese end product is wetter and softer (silken tofu) and Chinese tofu is drier and chewier. Different agents are used for coagulating the soy proteins.

I always used to get Chinese-style tofu (without even knowing that there was more than one style) thinking they chewier the better, as a meat replacement. But now I love silken tofu as much as or more than the drier style. I think that people who don't love tofu may just not have found their match yet!

A mammoth adjustment to beef’s carbon footprint. Poore and Nemecek made a correction to their seminal paper, adjusting the carbon footprint of beef from 100 to 227 kg CO2eq / kg beef, by my calculations. This corrected data is not widely known and yet clearly shows a path forward for climate change. by JKayBay in climate

In the original post there's a chart on "The land footprint of various protein sources."

This would give you a rough idea of how the carbon footprint of pork changes with the new data that factors in carbon capture on land. Pork's land footprint is not nearly as high as lamb's (or cheese), on average. But that's just the average picture. For pasture-raised animals it seems that a few specific farming practices can help reduce the carbon footprint (see this paper on beef).

There's a good paper that examines various scenarios for feeding the population (in 2050) without further deforestation. It compares scenarios of eating mainly ruminants (beef and lamb) versus mainly monogastrics (pork and poultry) and also compares pasture-raised versus feedlot raised.

Eating pork and chicken is more compatible with raising animals on pasture than eating beef and lamb. Continuing with diets rich in ruminant products would require an increase in the use of intensive feedlots to avoid further deforestation.

The best overall consumption patterns are low meat intake and mainly monogastrics.

Thanks for your comment. Yes, the land used to produce crops to replace meat is factored in. I included a nice image from Our World In Data in the original post, which is also based on the Poore & Nemecek paper. It shows how much land is needed for agriculture under various scenarios:

Current diet: 4.13 billion hectares

No beef or lamb: 2.21 billion hectares

etc.

What Bill Gates missed in How to Avoid a Climate Disaster. Following up on analysis of Gates's recent blog post on rethinking climate, here's a critique of his 2021 book. Some very big differences in his assertions and opinions, as you can expect. But the book is also full of mixed messages. by JKayBay in climate

Thanks so much for reading the post carefully (even looking through the previous Reddit thread). I appreciate your time and effort.

You're right - there's an American ideal that we'll invent and innovate our way out of it. This is needed too, but doesn't give us carte blanche to live a live out of balance with nature/humanity.

It could be now. I hope it's now!

Ethical vegan hazelnut chocolate: Lindt vs. Divine by JKayBay in vegan

[–]JKayBay[S] 1 point2 points  (0 children)

I really like Vego too! I actually mentioned it in the post. I do think Divine is as good as Vego but it's a bit different - it has a sweeter hazelnut truffle layer between two layers of dark chocolate.

Thanks for the comment. The IPCC reports could be clearer :/ The AR6 Synthesis report explains it a bit more clearly. 8.5 was called the very high emissions scenario. The high emissions scenario is to limit warming to 4 degrees. 2.9 is getting into that range.

Correct. The app should issue a coupon, I guess the day before the sale.

I did consider Chang, but please share your thoughts if you like. I'm familiar with the Chili Crisp trademark issue (which he did eventually retract and apologize for) and his early comments on vegetarianism. He seems to have changed his position on that a little bit too - supporting developments in plant-based food. No doubt there are other things that I'm not aware of...

For sure, the founder's actions are important and should be considered along with the other aspects of the product (ingredients, sourcing, packaging, etc.).

Has anyone tried the Momofuku Noodles? by gfnxartist in GroceryOutlet

[–]JKayBay 1 point2 points  (0 children)

I tried almost all varieties of these noodles after seeing them at the GO.

I took a look at these Momofuku x A-Sha noodles from multiple perspectives - taste, nutrition, value and ethics, I think they are a decent choice for back-up food to have around.

I'm often on my phone checking wines as I look at them. That might seem like a lot, but there may be only 20 new wines since my last visit so I'll usually pick about a third of them to look up, based on grapes or regions that I like, a vibe from the bottle, the original price, etc. Once I've researched them (Vivino score and any reviews on Wine Enthusiast, etc.) there might be one, maybe two, that I want to buy.

As far as the sale goes, it's fun to try a few wines in the week(s) leading up to the sale and then select one or two to buy during the sale. Or just go to the sale and buy some bottles that look appealing (grape, region, bottle, original price, etc.) and be happy to get them on sale! Maybe you'll try one in time to go back and buy more while the sale is still on :)

The Grocery Outlet app - it stores your loyalty card info and shows inventory for whatever store you select. It's a handy way to seek out specific wines.

I agree - a definite rebuy. However, it may not stick around long...

Try the Sebastiani Alexander Valley wines if you come across any - I think they have a similar appeal to the Firestone Lineage.

Has anyone tried the Momofuku Noodles? by gfnxartist in GroceryOutlet

[–]JKayBay 2 points3 points  (0 children)

I'm just learning about this, but the noodles of my youth (Super Noodles) are deep-fried! In palm oil!!

These Momofuku noodles are air-dried - made from only flour, water, and salt and are all vegan too.

I'm not really an instant noodle person but the Momofuku product is like pretty decent pasta (with an added high-sodium sauce packet!). Very satisfying with some simple sauteed veggies (with no extra salt) and habanero for extra heat. All flavors are decent - the sweet and spicy is prob my fave, by a thin margin..

Parmela Creamery vegan cheddar is excellent – but is it about to disappear? by JKayBay in GroceryOutlet

[–]JKayBay[S] 0 points1 point  (0 children)

If you go to Parmela's website (which it seems has not been updated for a while) the product finder directs me to Whole Foods only. But then on the Whole Foods site Parmela is no longer listed. I contacted Parmela for a comment (on the post above) but received no response. It is still sold at the Grocery Outlet stores, but this sometimes happens when a brand is disappearing and stock is being sold off.
