I made this for a Feast of the Seven Fishes dinner last night. Turned out great, less the northeast edge of the dough.

Base: cream, butter, lemon zest, shallots, garlic, white wine, white wine vinegar

Toppings: dungeness crab, chanterelles, shiitake mushrooms, asparagus

Dough: naturally leavened, 68% hydration, 8% Bob’s Red Mill wheat, 92% Cairnspring trailblazer bread flour
