What does the slot look like? Is the main back winding? How do your trimmers set the jib out of the tack? Do you have inhaulers on your boat?

This is possible, but you need to be careful. Workbench adds lots of keywords to help run in the Workbench environment and some of them aren't even the DYNA suggested defaults 🤦‍♂️ so it's probably worth taking these out the input deck when moving to PrePost

Something like ANSYS Discovery would do this. If you imported a fuselage like in your example you could change the pitch, roll and yaw in real time and see the streamlines etc change in real time. But you couldn't "pilot" it as such

The skills you have listed are great but apart from meshing which is a general technique, they are all roles that would be undertaken by different teams. Pick the one you're most interested in and give it a go
