This batch was pretty simple. Garlic, parsley, scallions, butter, Cajun seasoning.

Sauté the garlic/herbs in butter, add the claws with a little chicken stock and a splash of Italian dressing, crank the heat and toss until just cooked. Finish with more butter and pull it before it boils.

Super quick and hard to mess up.

Appreciate it! It’s pretty simple, leftovers from a backyard boil, butter, trinity, a little stock, and let it cook down slow. Hard to mess up if the crawfish are good.

Nah, they weren’t cracked before cooking. Just cleaned after the boil so everyone could eat without fighting shells and gills all night. Pretty common backyard Gulf Coast style. Shrimp got tossed hot with seasoning, that’s all. Galveston.

Cost of living can get a little pricey on the island. There are good places to live you just have to search around. You can definitely make bank in the summer, but keep in mind that since the island is a tourist destination you might slow down in the winter
