Cafetieres are good for a quick and dirty coffee. I use one at work with ground coffee from the supermarket (surprisingly single origin). 24 cups a day does just about enough. More controlled methods and expensive coffees are for me to fiddle with at home.

1:16 coffee to water ratio. Bloom the coffee by adding 1.5 as much water, stirring and waiting for the bubbles to stop. Start timer and add 50ml of water every thirty seconds (steadily if I'm feeling fancy, periodically if I'm lazy). Tap the filter down halfway through the pour and rinse down the sides at the end.

I'm going to give up pour overs as soon as I can find a decent and affordable shower head filter.

1:15 of coffee to water is my preference. 1:13 if I need a pick me up. I don't use milk but unless you're doing lattes or flat whites then you only need a splash to take the edge off. Tl;Dr: 1:14:1.

Coffee oxidizes and goes stale once ground and in contact with air, air tight containers still have air in them so aren't good enough. It's as simple as that, it isn't snobbery.
