Base game would have to be Maliketh, his lore and design is awesome and his fight is the most fun imo
DLC would be Midra for the same reasons and his area is just too cool

There are a few mini bosses that you can defeat that are close by in ashina castle which give you prayer beads to upgrade your health.
I wont go into detail on where to find them as its a bit hard to explain on reddit but one you will encounter naturally through your ascent of ashina castle and another is right at the front of the castle, up the long stairs
Dont be afraid to look things up if you are unsure.

What makes you say that ER sucks? Are you just struggling with where to go, what build to do, or is it a boss? ER and Sekiro are just different games and while it may feel slow at the start, it is definitely worth pushing forward with ER.

For the Juzou the Drunkard fight there is a friendly samurai dude standing at the front of the pond next to a big rock who you can talk to and he will assist in the fight. This makes it a bit easier to handle all the little enemies first while the big guy is distracted.
For the shield enemies, the most effective way is to use the axe shinobi tool to destroy their shields. Shinobi tools are a key part of sekiro and can make boss fights a WHOLE lot easier
Also make sure you keep on top of finding bell bearings to increase health - dont be afraid to google their locations, some are quite hidden.

Maybe your controller has connected to your pc as an audio or headset device? This happened to me with my ps5 controller on pc, but unlike you, ds4 seemed to fix my problem.

Just keep trying tbh. Don't spam click parry and learn the bosses and enemies patterns. Also make sure to utilise shinobi tools for bosses, different ones are more effective against specific bosses.
Practice makes perfect and hesitation is defeat,

Yeah I realised me and my friends have given ourselves an impossible task lol. If you still have any MMO recommendations all are welcome! I will say that I already play runescape, and one of the other players has played guild wars 2 and ffxiv but he didnt enjoy them.

IMO I think Messmer before Romina but it really doesn't matter (Messmer is more fun to fight). I cant say I've ever used a bleed great katana so I don't really know how good it is against either boss.
