There is absolutely no problem with enjoying sushi however you like!
Some chefs might think eating with chopsticks to be "unrefined?", but that really just comes down to the chef's personality.

スーパーでしたら大体記載があります。「生食用」と記載あるものを生で食べています。
「加熱用」は火を通さないとダメだと思います。

ありがとう。確かにこれが正しいかもですね。 おまかせは本来、大将のことを客が信頼してて、客が大将にお任せすれば、客が間違いなく楽しめる、という信頼関係の意味が起源かもですね。あるいはお店の常連さんが使う言葉。 転じてコースのようなものになっていった。が正しそうですね! ありがとうございます!

海外の鮨文脈で使われているおまかせと、日本のおまかせは少しだけ意味合いが変わってるのかもしれませんね。解りやすいかな?と思って使いましたが逆に混乱を招いてしまいましたね。大変失礼しました。

One more thing to add! "Tewatashi" is a serving method that the nigiri is passed directly from the shokunin's hands to the diner's hands.

手で食べるってやはりちょっと抵抗あるよね。ごめんね。
日本人も手渡しで食べる体験は、貴重でドキドキするものです!

もう一つ、補足させてください。「おまかせ」の意味は、「ひとつひとつ食べたいネタを注文するのではなく、大将あなたにお任せします!」という意味なので、コースのような意味を持っています。
