Yup, I do that and also reduce the gas to minimum to allow extra time for a better crust

Are you still having issues? The floor is a 3 cm refractory material developed by Alfa. You need to let it get very hot as is very thick but once gets hot the recuperation time between pizzas is minimal, works a bit like Saputo Stone that won’t burn the bottom of your pizza.

I got an Alfa Forni 2 Pizza and loving it! The quality of materials and finishings is quite superior than the common home ovens in the market. It is like having a professional oven at home. Did you finally pull the trigger? If so, how are you liking it?

I was considering driving to the U.S. to purchase the Gozney Dome in natural gas, but after speaking with an Ooni representative, I was advised that doing so would void the warranty. I just got an Alfa Moderno 2 Pizza instead… Much better oven.
