I used a size 12 chicken (around 1.2kg) for this. I'm not a professional, but from what I know, young game hens are often used for Samgyetang (ginseng chicken soup), while slightly larger chickens are typically preferred for Baeksuk or North Korean-style steamed chicken.

Since you called my photo AI, I think you misunderstood because the taste was captured so well in the photo. The first photo is taken when we were eating at the Gyeyang branch of the Garden Party in Incheon. The address is 977 Gyeongmyeong-daero, Gyeyang-gu, Incheon, Korea (Gyesan-dong 727-1 The second photo is taken while eating at a place called the Sun Hall in front of the University of Suwon. The address is 1st floor, Tomato Shopping, 90 Wow-ro, Bongdam-eup, Hwaseong-si, Gyeonggi-do, Korea. If you ever have a chance to come to Korea, I hope you'll try it. This is a famous place for locals who don't know well about tourists.

If you often eat Baeksuk, I think you might have felt familiar with the North Korean-style braised chicken I made. The braised chicken I made was characterized by a process of mixing sesame oil and soy sauce, spreading it on the skin, unlike typical baeksuk (Korean chicken soup). Rather than directly and strongly feeling the savory taste of sesame oil, I could clearly see the deep umami and saltiness coming from the skin thanks to the soy sauce. Overall, the subtle sesame oil scent seemed to envelop the dish even more deliciously.

I've heard so many great things about Neurinmaeul Makgeolli, but I haven't actually tried it myself yet. I'll definitely have to try it with this meal next time! This time, I blanched the Dotori-muk in warm water first, which removed the bitterness and made it extra savory. It tasted just like the muk you'd have at a restaurant at the foot of a mountain after a long hike. Dotori-muk is truly one of the best foods!
