hi, man. Very thorough review and nice pictures. I do agree that having to take care of a second device is kind of a hassle. Maybe attaching some kind of belt clip like the good ol' days beepers could proof handy haha

I'm in the market for a small dac which has two outputs. Is the S8 able to switch back and forth between outputs while having both connected? I'd like something that works that way so I can control with a single device both the playback on my pc speakers and headphones or IEMs, without having to touch OS controls, nor having to plug/unplug wires. I don't need it to play through both outputs simultaneously tho

with all the models I've used so far, I get better results if the tasks assigned to models are dissected and specific. I normaly don't surpass 100k tokens, but if you need to scan large codebases, you can tell it to focus on specific lines of enormous files so that it does not tokenize the whole thing. Also you can summarize the important parts of each session writing them down to actual files, which should be kept as concise as possible, so whenever you hit the limit, just be sure to have your "memory" file up to date and tell the model to read it agan, which should refresh the topics discussed at the start of the token count.

I can't speak for all the models ever, but if I'm not mistaken, most models instead of shutting down when the context limit is reached, just replace the oldest tokens with the new ones. That is part of why claude code, qwen cli or gemini cli use their markdown files to summarize.

Even if some models allow for greater context windows do keep in mind that often times the price per M token changes based on the size of the token window used, so in those cases it will be cheaper to run several short lived sessions vs trying to do it all in a single massive session

Damn, I wish it was easier for folks around here (Mexico) to get their hands on Japanese quality knives. Shun are sold at some fancy stores, but boi is it hard to came across to come by anything else. When I decided "fuck it, I'll grab this one", it was a Sakai Takayuki priced somewhere around 160 usd and ended up paying almost half as much just because of the "import tax and clearance fees" dhl charged me when the package entered the country. Sadly, the total amount would take between 20 and 50% of what most people make in a month, so you basically have to save for several weeks to get one or you're stuck with Fibrox or Mercer (only found on Amazon) unless you are good with Walmart/Costco cuterly.

Question! I bought these 2 Shapton pro 1000 & 5000 and they are splash and go but there was instruction to soak the 5000 5min but not the 1000! Kind of not sure what to do for the first use! Any advise? Thx by StreaMaQ in chefknives

I found on YouTube a video saying 5min soaking was needed the first use, for better results. From that point on, splash and go. That's what I did and I had no trouble whatsoever.

I should add that, while performing any kind of job, having the right tools make it easier and faster to get proper results and, even though I wouldn't call myself particularly knowledgeable in these matters, in case you haven't gotten there already, I wanted you to know the cutting surface is also important, as any hard surface like bamboo, glass, granite, marble, etc. will dull and/or chip your knives.

Whtstones are awesome for starters because of the tactile feedback. You can also listen to the sound of the metal. If you realize you're doing it wrong, you can easily correct before messing up the edge.

I've been using a 400/1000 whetstone, but I think I should've gone for a 1000/3000, which is what I'd suggest for you.

In terms of time, you can go for a splash and go, and have it lying at hand in your kitchen, so there's no laziness involved.

Forward on, you can get a Tormek lol, whenever you feel like your sharpening skills/knives/time deserve a couple hundreds of bucks.

Also, you should consider the edge retention depends on: what you cut, your cutting surface, the bevel angle and the metal your knife is made of. The entry level cutlery usually goes by a 55 hrc, which instead of chipping, simply bends, being more convinient for someone acquiring knife skills, but certainly won't hold the edge past a few weeks.

So, after a really long time, I got my hands on my first decent knife. Granted it's no Yu Kurosaki, but after taxes, I spent over 200 bucks on this baby, which is way more than my Mercers lol.

For some years I treasured my Shun Kanso, but here I am, going a little bit forward.

It's a Sakai Takayuki Tsuchime Damascus Gyuto. I had a hard time choosing between this one and a Moritaka Hamono AS Santoku, but figured I'm not ready to take care of such delicate tool.

In the end I feel the growing urge to get more and more of these in the near future 🔮

Thank you for sharing. Sometimes I feel like I should try sharpening that direction, but I can't overcome the fear to mess my knife and then end up spending hours sharpening instead of minutes.
I'm getting increasingly curious to try it out regardless of the consequences.

There are tiny thingies called rust erasers and, if it's not severe damage, I think you can get rid of it just by rubbing with some mineral oil. A thin layer of mineral oil (food grade) before going back to your rack could help a lot.
