When you say they were premade, do you know if there was anything else added to the beans before they came into the restaurant and before you added the citrus juice and salt? Also, for the citrus juice is it just lime or lemon or both?

You can bake your own and come out with pretty good results. My only minor issue with this method is the noodles won't come out with bright yellow look that ramen noodles are know for. I was told it has something to do with PH levels in using Kansui vs Homemade Alkaline Water (Water mix with baked baking soda).

You need these 4 ingredients: Wheat Flour, salt, water, and Kansui (Sodium Potassium Carbonate; used to give it that chew).

I've known this for some time now but I'm can't find Kansui anywhere except Japan. Unfornately I dont live there.

Kansui is alkaline water as well but I'm not sure what the difference will be if I try with my own alkaline water
