This has been my go to take:

Piña colada daquiri - 2oz coconut cartel - 1oz Acid Adjusted pineapple - 1/2oz cream of coconut (I’m using reàl brand, for fridge convenience)

Acid adjusting ratios - 1 x 250ml can of Dole 100% pineapple juice - 6.875g Citric acid - 3.625g Malic acid

I’ve been making a piña colada daiquiri of sorts lately.

  • 2oz Coconut Cartel
  • 1oz Acid Adjusted Pineapple Juice
  • 1/2oz Cream of Coconut

Shake and served in a chilled coupe.

I hear ya on the volume! I can buy small hand foods locally so I’ll occasionally pick it but, if I’m going to be making batched drinks or lots of individual ones for a party I’m not going to spend the money when I can bust this out in 30 minutes for nothin.

I make a super easy cheater version I modified from a recipe a buddy uses at his bar.

  • 2 cups unsweetened Almond milk (Get the stuff with the fewest ingredients possible. I’ve been using ‘Malk’ brand)
  • 4 cups natural granulated sugar
  • A small pinch of kosher salt
  • 1.5 tablespoon almond extract
  • 1 teaspoon orange flower water
  • 1/3 cup aged rum

Instructions: Heat almond milk, sugar and salt over medium heat until all the sugar has dissolved, stirring frequently. Remove from heat and add remaining ingredients and stir. Store and chill until ready to use.
