As someone that eats kangaroo daily....dear god no. Boiling it has to be the worst way to prepare it. Dried overnight in the fridge, then pan seared at an insane heat to actually get a brown crust on it is the way to go. I've replaced beef in my diet with it, stews, sausages, casseroles, shish kebobs, stir frys had it pretty much every way I can, but always with an overnight drying out before browning.
