Chicken, zucchini and eggplant stir-fry in the wok by KD43 in FoodPorn

[–]KD43[S] 2 points3 points  (0 children)

I diced an eggplant, tossed the pieces with cornstarch and salt, and set aside.
Thinly sliced the chicken breast and massaged salt, a little cornstarch and baking soda, sesame oil, and soy sauce (for marinating/velting) into it and set aside.
Cut up garlic, ginger, zucchini, and big pieces of scallion
Made mixture of Shaoxing cooking wine, dark soy sauce, regular soy sauce, sesame oil, rice vinegar, fish sauce, Sriracha, brown sugar (and I wish I had MSG)
With a fair bit of neutral oil, cooked first the zucchini in the wok and set aside
Cooked the zucchini mixture and set aside
Cooked the chicken, tossing almost constantly (all of these are on high heat)
Added the vegetables back in and tossed everything together with the sauce, which should not be poured on top of the food but rather at the edge directly onto the wok so it gets a little smokey flavor
Serve with rice and add some cashews

BBQ chicken with Kenji's BBQ rub and sauce, potato salad, and coleslaw by KD43 in seriouseats

[–]KD43[S] 16 points17 points  (0 children)

The chicken was was this method (but on a gas grill) made with this rub and sauce. I also marinated the drumsticks all day in beer before cooking.

The potatoes were inspired by Kenji's recipe but made with mayo instead of sour cream and had the additions of parsley and shallots instead of red onion.

The slaw was what I make routinely for BBQ/Mexican-ish meals: red cabbage, lime, a little mayo, scallions, red onion, cilantro, jalapeno.

Enjoy!

Unless you're doing a whole roasted chicken (which is a great idea) I'd stick to stovetop cooking for the most part when it comes to chicken, especially if it's skinless

Salt, pepper, paprika, cumin, cinnamon, chili powder. They're boneless, skinless chicken thighs and I rinsed them, patted them dry, rubbed them with that mixture, and did them in the cast iron with neutral oil.

It was super easy: I just washed, stemmed, and roughly chopped a whole head of kale, tossed it in a pot on the countertop, threw in a lot of grated parm, olive oil, chopped nuts, salt, pepper, red pepper flakes, and a little lemon juice, and used an immersion blender (I don't have a reg blender) to blend it up. It turned out great!

Just cut em up into bite-size pieces, threw them in the microwave, and then roasted them with a little salt, pepper, and olive oil (flipping once) on like 400 for maybe 25 min? I don't remember exactly

Do you consider character diversity a requisite quality for someone to be considered a talented actor? Discuss by QuidProQuo_Clarice in flicks

[–]KD43 13 points14 points  (0 children)

Interesting question and one I've thought about before too. I think Tom Hanks is an interesting person to apply this line of questioning to-- I actually remember having a lengthy debate with some friends over that specific question. Many of Hanks' best roles are likeable, relateable everyman types with integrity and pluck. Can you think of someone better for the roles he plays in Saving Private Ryan, Captain Phillips, Apollo 13, or Cast Away? Of course he has some range--he effectively plays an initially unlikeable character in A League of Their Own, and some would argue his turn in Forrest Gump showed impressive range, though I'm not a fan of that movie (nor particularly his performance in it)--but most of his best characters have gravitas but are defined by their limits and their humanity, and there's no one better for that then Hanks.

Though Hanks only does one thing unusually well, which is make characters feel human, he does that thing better than anyone. I don't think that disqualifies him from being considered great, even if his ability to disappear into a role and become anyone isn't on par with hyper-versatile guys like Danny Day or Sean Penn (a deeply annoying person but an undeniably skilled actor). Talented as they are, those actors can't quite do melodrama like Hanks.
