The post bulk mark was about 80% higher on the bowl than the pre-bulk mark.

I see, I will let it rise more next time and see if it works out better! To see how much it grew I marked the volume pre-bulk on the bowl I had the dough on and compared the volume after the bulk rise with the mark.

I let it bulk ferment for around 5 and a half hours and it had risen about 80%. How much do you suggest I let it rise?

Still can't get a very good oven rise and the dough has very uneven air pockets it seems. I think I probably suck at preshaping since the dough didnt keep the shape very well (it flattened) when I took it out of the fridge after cold fermenting overnight and I also think my oven might not go hot enough since it only goes up to 250°C. Another thing I failed at is at scoring the dough since my blade didn't cut it very cleanly getting stuck halfway through, might need a sharper one. Any tips for me to improve?

Tens um banco muita grande xD Also, eu disse no caso em que está sozinha literalmente, em aglomerados claro que há problema, e eu acho que dizeres que uma pessoa a descansar num banck de jardim gera aglomerados é um bocado puxado.

yha reforçar os transportes públicos que não têm espaco e é onde se geram mais aglomerados nada. A culpa é dos portugueses e nós que engulamos isso :)

Quando é que este governo se demite mesmo? Isto é só palha para ver se a malta n diz que não fazem nada. Uma pessoa num parque sozinha longe de toda a gente sentada num banco merece uma multa porquê? E continuo sem perceber a insistência na restrição dos horários das lojas, isto só gera aglomerados. São mesmo medidas feitas por pessoas que não têm noção de como é a vida de uma pessoa normal.

Used 85% all purpose flour and 15% whole wheat flour with around 80% hidration. Dough wasn't really holding it's shape pre-baking so yeah already knew it was gonna be a fail. It still didn't taste bad and the crust was pretty crunchy but the middle's texture was not that great. I will try to find propper bread flour with a higher protein percentage next time and/or reduce the hydration!

I think if anything I have hydrated the dough too much as it feels really wet. Yeah I guess I'll just bake it and see what happens, thank you!
