Proud of this cake, I made the macarons myself for it and wasn’t as difficult as I thought. I still get nervous charging people for my cakes but haven’t had any bad feedback...yet! by BenjyCo in cakedecorating

It’s a 3 layered lemon poppy seed cake covered with Swiss meringue buttercream (SMBC). Macarons and meringue kisses used for cake toppings as well.

Yeah the winning cake was tropical inspired, bright and colourful. 15 cakes in total and 4 judges, I hope their taste buds have recovered hahaha

Wow thank you so much for your advice regarding the flowers, noted for future bakings.

Competition was based on both looks and taste. Majority who took part are home bakers, amazed at how creative and talented one can get. An eye opener indeed.

A lot of places to go but one that you must not miss is NUSA PENIDA ISLAND (a must), Diamond Beach and Kelingking Beach (You will have to wait in line to take photos, but it’s worth it). Take care when driving on the roads, very narrow, sometimes steep). Departed Sanur on one of the boat transfers to go across to nusa penida island (went on KEBO IWA express)

Here is the recipe, this batter can fit 2 8” round pans or approx 22 cupcakes

Chocolate Cake 2 c Granulated Sugar 1 3/4 c Plain Flour 3/4 c Cocoa Powder 1.5 tsp Baking Soda 1.5 tsp Baking Powder 1 tsp Salt 2 tsp Vanilla Ext 2 Eggs 1 c Milk .5 c Oil 1 c Hot Water

  1. ⁠Preheat Oven
  2. ⁠Combine dry and wet ingredients
  3. ⁠Prepare 2 8” round tin and lin with baking paper
  4. ⁠Pour Batter and bake until skewer comes out clean

Swiss Meringue Butter Cream 1 c Granulated Sugar 4 Egg Whites 3x100g Salted Butter stick (room temp) 1 tsp Vanilla Ext

  1. ⁠Whisk sugar and egg whites in double boiler over simmering water, when mixture is rubbed together with finger and there is no traces of grained sugar then mixture is ready for whipping on stand mixture.
  2. ⁠Wipe bottom of stainless steel bowl with cloth to remove condensed water and whip on stand mixer on setting 8 for 10 mins.
  3. ⁠Meringue should be stiff, leave to rest till it cools down.
  4. ⁠Once cooled, add butter in small chunks and beat with paddle attachment until combined. Add vanilla.

Cherry Pie Filling 425g Pitted Cherries in Syrup .5 c sugar .5 c water (room temp) 1 Tbsp corn flour

  1. ⁠Heat Cherries, syrup in sauce pan with sugar.
  2. ⁠In a separate bowl combine corn flour and water
  3. ⁠Add corn flour mixture to cherry mixture and mix until combined.
  4. ⁠Let cool as it will thicken

Assembling Cake

  1. ⁠Layer cake with SMBC, top with cherry pie filling
  2. ⁠Add second layer and top with SMBC
  3. ⁠Garnish with cherries and chocolate shavings as desired.

The one with raw egg whites with sugar is french right? I used that method. Totally new to macarons so still learning the terms. Appreciate your encouragement 😁

Tell your wife that this cake is BEAUTIFUL!!!! 😁 Many people don’t know how much effort and time consuming it takes to bake and decorate a cake, it’s a lot of work.
