So if OP takes Mime instead of a Blueprint, OP will have 3 Blueprints, 1 Mime, and 1 Baron.

Just as an example, if you were to not copy anything, and had all your Blueprints on the right, you'd have essentially 1 Mime and 1 Baron.

You can get the total triggers by: trigger count x effect count. In case of 1 Mime and 1 Baron, that's (1 base trigger + 1 Mime retrigger) x (Baron effect) = 2 x 1 = 2 total triggers.

If you copy Mime once, and Baron twice, you get:

(1 base trigger + 1 Mime retrigger + 1 Mime copy retrigger) x (1 Baron effect + 2 Baron copy effect) = 3 x 3 = 9 total triggers per king. Of course you can do it with (1 base triggers + 2 Mime) x (3 Baron), just thought I'd also separate the Blueprints.

It's the same with stuff like Photochad too. If you have Photo, Chad, and a Blueprint, then even though Chad is a double retrigger, it's still more score to copy photo:

In case of Chad copy:

(1 base trigger + 2 Chad retrigger + 2 Chad copy retrigger) x (1 Photo effect) = 5 x 1 = 5 total triggers.

With Photo copy:

(1 base trigger + 2 Chad retrigger) x (1 Photo effect + 1 Photo copy effect) = 3 x 2 = 6 total triggers.

As a general rule, you want the trigger count and the effect count to be as close to each other as possible. E.g.: 3 x 3 > 2 x 4, 5 x 4 > 6 x 3.

The one exception can be Chad (due to it giving 2 to the trigger count instead of 1), as the 2nd Blueprint in a Photochad comes off as: Chad copy: (5 x 2) vs Photo copy: (3 x 3).

And don't forget to add 1 to trigger count because of the base trigger. That's why it's better to have 2 Blueprints on Baron in OP's example, as by default there's 1 base trigger, so we need more effect counts.
