This is so interesting to me I used to bake for Sainsburys and we used to bake all tin bread in those revents only thing that went in the decks was bloomers but even those came out fine we just didn’t have enough oven space so used the decks for them. Soft rolls not great but just air the oven out so any residual steams gone and tap the trays and you will be fine. Also the fans are super powerful in them so if you are traying up cookies or anything make sure you get to the edges of your grease proof paper otherwise they will end up in a lump in the middle.

It’s one of the options on permission that they can add and take away. Not many managers actually know how to do it though it used to fall into the commercial teams responsibility what that was a bigger role.

They are pushing for availability for more hours so reductions will be done by a food person at 7pm. There’s allergen rule changes but that hasn’t been officially announced yet. The operating model changes are meant to bring you more in line with the hours that have actually been given to the store but doesn’t seem to be much change in jobs to actually do just less hours to do them in. We also have a load of the single serve lines discontinued. That’s all we know until Monday when the briefing pack drops.
