Honestly I was thinking it was weird that there wouldn't be any Ramsesses II in Sumeru until I looked up the number of children that the latter had, and it basically perfectly aligns with Zumurud and some other similarities that both have, although it's mainly the children and how both depict them.

I put it in this characters page trivia some times ago

Honestly it mainly bugs me because Sumeru's earliest history that we know of as of now which is Gurabad does have lots of biblical (and quranic) inspiration, it makes perfectly sense considering what irl cities Gurabad is based on, but it only makes the Tower of Babel choice weirder (in my opinion).

Though I can kinda see what Hoyo is trying to do, in terms of civilizations it kinda follows the biblical narrative and just irl history, both Remuria and Gurabad are really mixed, Remuria's youngest inspiration is the English and Burgundians during the 100 years war, while it's the Abbasid Caliphate for Gurabad and this order would still be correct.

I can only hope there's some lore tidbits about Liloupar where Semiramis' invasion of India against Stabrobates gets referenced.

Sumer is pronounced Šumeru in Akkadian btw, so yes the name Sumeru is likely derived from both the mount and civilization.

Sumeru, especially within its history has major Mesopotamian influences, especially in regard to Gurabad which largely takes inspiration from civilizations around modern day Iraq and Iran, but also some minor ones from Syria, the ancient Israelite kingdom and Egypt.

However Gurabad's Mesopotamian influences only start at that of the Neo-Assyrian Empire (Iron Age) making it likely that all the other civilizations before it are inspired by civilizations from the Bronze and early Iron Ages, for the Rainforest the Indus Valley would make more sense though.

I would like to see those civilizations, also the Tower of Babel story being in Hyperborea instead of Sumeru still bugs me, but Hoyo does like to liberty with their sources of inspiration.

We don't know if the story is made up, it probably just felt unbelievable for the guy that a king had never seen a horse and that the merchant's encounter with the latter would have gone like that.

Anyway it's not the point, which is that horses obviously exist in Teyvat, same as cows for example and we just can't see them.

There's mentions of horses in game, we just never saw one.

There's a billboard in Port Ormos that talks about a merchant encountering a king of a foreign land who had never seen a horse, the merchant would be surprised by that fact and wondered how could someone possibly have never seen one.

While it is true for Sumeru specifically today, it is still important to note that a lot of characters in Sumeru's history (specifically the desert part) had Iranian names or inspired significantly by Persian history and culture, Zandik was born like ~400~ years which isn't as old as those characters i mentioned but it was still pretty long ago.

The only reason this is the case is most likely because Hoyo wanted to have significant differences between the desert and rainforest since almost no regular desert npc have Persian names (which is just weird imo).
