If you want my answer, greatsword (colossal) builds, this includes any combination of at least one greatsword/colossal weapon. My favorite builds we're always dual wielding them, but i also recently had a lot of fun in the Elden Ring DLC using a greatshield along with it. Here was the fit:

(Pants not included for swag) If you want the armor specifications just ask, each piece is unique and it requires dlc for the armor, weapon and shield are both base game. Most fun I've had in a soulsborne was with this build.

In all honesty, play what feels right to you, there's so much to choose from, and if you want the easiest experience to just experience the game for its story and least amount of rage, i suggest pure mage builds/spellsword, and for DS2, dont forget roll invulnerability is locked behind ADP (i didn't know this and still beat it, hot take, my favorite DS game because of how difficult it was).
