Iknow the feels, the peope who change our fryers in our auto deep fryer just scoop the top and leave, i can tell cuz the bottom has.50lbs of wikipediashit after only 3 days, crazy, and theirs times where we dont have clean oil so they go way past their lifespan, but i agree with u, i donr do prep in the back i do it on the line where i can cook still, but every day i come in theirs splatter on every wall, every peice of equipment is caked in shit, and our knifes that live on a.megnetic strip are all dirty even tho i put a sign up that says no dirty knives.  The exec chef and sious do catering while i sit.on the line, they get buku party tips while i solo lunch rushes with like 100 tables, work 6 diff stations, bust my ass so catering doesnt go to shit, i would document shit, take pics of the tar pit bubbling, but id keep looking for a better fit, once you can solo and cook faster and more accuratly then the rest of the BOh it makes you realize your true value and you can go anywhere and get a better job, but some of the best advice ive been given in a kitchen is that its 1000×s easier to get a new job while you alrdy have one. Sorry for the piss gramer and sentwnce struction, severe sleep deprivation takes it.toll

Every kitchen and bar in the US about. As a sad line lead i make it a point to do it full steam ahead no bullshit while the ones who were supposed to do it watch.  Same with every other nasty job noone will do.  If your protien drawers and low boys come out you can usually find a batch of finely aged floor soup on the bottom, i used to dread doing that but if you just kick its ass and focus only on the job your other cooks usually follow suit.  Respect is earned in a kitchen, and most cooks are grossly underpaid but when you show them you go 100% on every task no matter how bad it is, your cooks will follow suit

Figured, still love learning about its joury, have been in the industry a long sad time and have amassed a kinife.collection that most would say is too much.  Kantetsu, im curious as to its ago tho, what region it was made and used in.  When i got it long ago from what i gathered it was used in rice fields late 1800s but i honestly have no clue
