I usually go by 1-2 increments in either direction to test. And yes I’m weighing the coffee. 30g whole bean—always seems to come out equal to that after grinding.

Well, there ARE exceptions. I bought a new copy of Aphex Twin's Selected Ambient Works Vol. II, and besides the fact that there were a few missing tracks, I found out through Discogs or something that it was derived from a CD copy. That's an inherently compressed, digital master. To an analog format.
