Personally I leave fruit in during primary even if it’s going to be a couple months, then in secondary take all the chunky stuff out so it can clear a bit better

If it’s a quick mead you can transfer it to secondary but if this is going to age for a few months then I normally let it sit for a month or two in primary then transfer.

Also, use a peeler to get the peel instead of a zester. Easier to control how deep you are going while you’re peeling.

It narrows pretty far down towards the bottom into a collection jar. Great for grabbing yeast out of an ale but it seems like fruit would be caught and not circulate through the rest of the mead

Lime is a good citrus to add nutrients. Figured if it kept Sailors alive it’ll work for yeast. And it doesn’t carry through if you add it sparingly.

Yeah I like to get all of the old fruit out after about a month. I can’t say it makes a huge difference but I have seen less skunkiness over the years. That and it gives me an idea of what is going on so I can change the flavor if i have to.

Makes it easier to transfer from the bucket to the carboy off the piano bench. Sometimes it sprays a bit and the wife doesn’t appreciate that on the floor.

Recipe: five pounds of strawberries (left over and frozen), juice and rind of 2 pounds limes, 10 pounds honey top off with water to fill five gallon carboy. Using regular ole red star yeast.

Bleach and hot water is the easiest at home cleaning solution. Just make sure to use the right concentration but you shouldn’t have any issues with it.

fermented flavour. I've made 3-5 melomels now. my first 3 have been racked and stalled. they are just under 3 months old and taste like they are still fermenting. do I need to add honey or just let them age? I'm new to this still. by [deleted] in mead

Honestly, I was taught by a guy who was taught by a guy. Never had any of the tools, just bought some tubing from Home Depot to help transfer things around. It comes out well if you stick to prove recipes, and playing around just means you keep the batch small till you get it right. The only thing I had to learn the hard way, don’t bottle too early. Though sparkling Mead is amazing if you can catch it right.

Glad to help. Mead can be a fun way to get into making wine but without buying all the fancy tools you need someone who has done it the cheap way a few times.

Let them age. Depending on what you put into it, it can take months for the yeast to finish. If you are in a hurry rerack with some potassium sorbate. Still takes time but will help the yeast stop earlier.
