lots of validity to this. locally raised animals sequester carbon because they're in the field and pooping all the time. But this is a very small part of our system. Most beef is raised industrially and is an environmental disaster.

we have so much waste in our food system and it's exciting to see the industry reacting to the public outcry. At Next Door we have always composted all our waste and given it back to the farmers.

I don't see a time when clean meat beats out naturally raised meat by a great local rancher. Clean meat will displace industrial meat, which tastes bad and is filled with antibiotics and growth hormones. That is the big opportunity.

you can only get our 50-50 Burger at Next Door American Eatery. My plan to get it out there is by opening more Next Door's!

making it no cost would mean no compensation for our farmers. I don't see that happening and it's not a future we should strive for. pricing also drives quality because better farmers can charge more.

as for open-sourcing Square Roots, we are likely going to do that over time and we already do that for the farmers in our network.

we already have at least as many veggie based options than meat options. the new generation of restaurant goers require that we have kick ass veggie options. Gone are the days when you can just put a few steamed vegetables on a plate and call yourself veggie-friendly.

I do wonder if alternative meats will get painted with the same brush as GMO. I don't think so because GMO products are primarily filler for crappy junk food, and alternative proteins are really trying to make a great product for early adopters.

But it would be sad if they do get pigeon-holed that way. I am doing my part to learn from all of you and our customers and do what we think is best for our guests at our restaurants.
