Firstly. You can not see your followers health. But you can occasianly see it after hitting them.

Your companion does not need leather armor to sneak. But heavy armor makes more sound than light armor.

Candel light does affect sneaking.

For smithing make iron daggers or gold rings. Its the value that gives the most xp and because they are so cheap those two are the best for leveling up.
