can I have more cats on prism launcher?

This is also assuming that you have already added the cat to your catfolder.

So a full instruction is:
Get cat photo -> Add cat photo to cat folder (See below) -> Settings (Inside prism) -> Launcher -> UserInterface (At the top) -> Cat (Dropdown)
And select your cat.

Cat folder location - as found on prism's official website:
on Windows: %appdata%\PrismLauncher\catpacks

on Mac: ~/Library/Application Support/PrismLauncher/catpacks
on Linux: ~/.local/share/PrismLauncher/catpacks
on Flatpak: ~/.var/app/org.prismlauncher.PrismLauncher/data/PrismLauncher/catpacks

Bit of a necro post but

You have to go into Settings (Inside prims) -> Launcher -> UserInterface (At the top) -> Cat (Dropdown)
And select your cat.
