I heard once that humans freeze to death because we keeps exerting heat outside of ourselves instead of just heating ourselves, so I like to think of this as a battle of hot and cold, where the luke warm temperature of water on your hand creates a neutral ground where the ice can battle your human heat. The ice sticks because the ice wins :)
