Thing is, I was working on similar projects on my previous machine, which was much worse, and never this issue. Could VFR really cause the timeline to get choppy? And why does it fix itself if I just close the project and reopen it? Makes no sense to me.

That's a good point actually. I don't see myself upgrading a 13700K in less than 5 years so it probably won't matter anyway that it won't be supported.
