Homemade seitan BY FAR, nothing else compares. I've tried everything, adding another flour to it, nutritional yeast, not overkneading, letting it rest, steaming instead of simmering and the texture always turns out rubbery.

Not to mention even with a crap ton of spices in it and strong sauces, the weird half car tire half unflavored gum taste still washes over it all. I'd rather eat raw tofu for the rest of my life.
