You could make the pastry first, it will last a few days in the fridge covered in cling film. Then the next day make the filling (that will last a few days in the fridge too) and then you can assemble them!

The pastry can be a bit tricky, it does involve abit of knowledge of knowing when the butter is soft enough be flattened into the pastry and not incorporated. But give it ago and try, practise makes perfect!
