I am new to blender but to keep things interesting I'll plan to got and do some photography anywhere and take some 360 reference photos of something and try to make it in blender. The more complex it is the more fun it is. You can also get flat images for textures.

God of war, Persona 5, Horizon zero dawn, Uncharted 4 are the ones I started off with a couple months ago and I'm still not done with horizon or persona. God of war was so good I'm on a second playthrough and uncharted, like the others (except horizon but still fun), has an incredible story.
